 In October 2018, Beijing Ying Hai Smart Automation Science and Technology Ltd, a joint venture between Haidilao, a chain hot pot enterprise, and Panasonic Group, introduced an automatic dish delivery system into the kitchen system of the first smart restaurant of Haidilao. Based on orders placed by pad as terminal, the system can transform the whole process, in which a dish bearing the ordered food is carried from the refrigerated warehouse until being placed on the tray, from manual operation to automatic operation.

 

This time, Beijing Ying Hai Smart Automation Science and Technology Ltd, combined with the practical experience of Haidilao's first smart restaurant and other stores in the past two years, developed a new dish delivery system. In addition to tracing food safety with RFID, we also had a better understanding of the user's business process, improved the system in the perspective of optimizing the whole supply chain, and introduced the updated system into “Haidilao Lujiazui Restaurant in Shanghai”. In the future, Panasonic Group and Beijing Ying Hai will continue to focus on the gemba process innovation of users, optimize the automation system, and strive to provide solutions for the catering industry that can achieve food safety and improve efficiency at the same time.

[Advantages]

1. Equipped with RFID, it could manage the expiration date of each plate to ensure food safety.

This system is equipped with RFID technology, by which it could obtain the information of plates from RFID tags, manage the shelf life and inventory of food materials, and centrally manage the production plan and actual dish delivery, so as to realize tracking management. If any expired food is detected, the plate will be automatically released to avoid the risk of providing expired food to diners.

2. The transfer case shuttles between the central kitchen and the store, and the mechanical arm can directly take plates from the case to refill them.       

The logistics and processing center of food materials is called the central kitchen. Between the central kitchen and the store shuttles the transfer case. This equipment can place the case transported from the central kitchen to the store directly on the refilling table, and the mechanical arm can take out the plate directly from the transfer case to refill it. This process will expand the unmanned process to avoid external invasion and improve food safety management.

3. It greatly improves the productivity of the mechanical arm for refilling and delivering.

Combined with the actual on-site application of users, the design concept has been greatly modified. Compared with the model of Haidilao's first smart restaurant, the number of control axes of the manipulator arm is reduced by 80%, thus the efficiency of the system is also greatly improved. In addition, the area of the equipment is reduced by 30%, so the dish delivery system can deliver and be operated in a smaller space.

Major Characteristics

Elevator is used for dish delivery, which can quickly complete the process from placing an order to releasing the dish.

Two kinds of mechanical arms cooperate efficiently to refill the plate, and RFID technology is adopted to ensure the freshness of food materials before automatically refilling the plates (such as automatically releasing expired food).
